Agreed that operating the gas and brake will output more heat and strain on the transmission,

No need to even do that.
Just drain, measure what you drained out . . . fill with same amount of new fluid, replace fill cap and level check port. Then start car, select each shift position and pause in each for 5 seconds is recommended. . P-R-N-D-M . Then drive the car for a day or two. . . repeat the drain/fill procedure one or two more time.
Do a final fluid level check after driving and hour or so ideally on a nice warm or hot day so fluid will warm up. Then check via fluid level check port on the side of the transmission again. If just a little drips out . . fine. If none does. . . add some fluid just TILL a little drips out. Done.
Many do not have an OBD scanner to monitor transmission temp. So the above works fine with no need to monitor transmission fluid temperature and, as you found, pretty difficult to get it to read much higher than 185 or 190.
The best way to drain and fill is to disconnect the oil cooler line and attach a 3/8" clear tube. Have somone start the engine after first draining and filling the transmission. . . then add more as the engine runs till clean fluid runs out of the clear 3/8" tubing.

Just for future reference. . . many Youtubes on changing the transmission fluid on a Chevy Cruze (and Chevy Equinox) which uses the same transmissions essentially.
Here are two videos , the second, which also include important details and points on how to do especially a complete fluid flush. The Equinox transmission video in particular shows details of tools, locations, and how to accomplish this. One of the better on Youtube for this particular GM 6T4x transmission class.

You didn't hurt anything.
Much of the heat in an auto trans comes from the shear forces the fluid sees in the torque converter.
Cruising on the highway for an hour -> torque converter locked up, minimal oil heating.
Brake torque with e-brake -> lots of shear forces on the fluid and heat is quickly generated.
Glazing clutches? I think you're safe. The trans doesn't slip the clutches for a vehicle launch - that's what the torque converter is for. The damage comes when you overheat the trans fluid and things that count on it for lubrication, cooling and suspension start to die.
I thought the idea was to keep pouring fluid in while it was draining out , but with that 3/8 line from the cooler to a pan the trans oil pump is pushing all the fluid out of the trans into that pan thus getting rid of all the dirty fluid the key was stopping when it was spitting and sputtering or untill it ran red . I think I can do it ��
I read somewhere that the reason it's dark and dirty is due to the clutches in the trans they have carbon on them ??? And that's were the dark color comes from although that oil in the video looked dirty as heck .

So I have a 2012 sonic 1.4L turbo and am trying to change out the fluid. I have 2 questions can anyone point me what kind of fluid to use? It’s got 140K miles on it and idk when the last person did a change on it and I am going to replace a CV axle soon. Also after removing the skid plate do you have to remove the drive shafts to get to the drain bolt or not? And if anyone can point me a little better to where the fill bolt is at I’d appreciate it I’ll a little lost with that diagram

Look at the videos in post #63 above. If you have an automatic transmission the fluid is any Dexron IV GM transmission fluid. . . AS SHOWN IN THE First Video in Post #63.
Do not use any "all car" multi purpose fluid. You will need about 10 quarts for a recommended double drain and fill to replace most of the fluid in the transmission, torque converter and transmission oil cooler that is part of the radiator.
Note. . most find that when draining the old fluid out, about 5 quarts comes out. It is best to measure what drains out and then replace with EXACTLY the same amount.
Note also, it's best to do drain and refill again one more time after driving the car for a day or two. . . or at least a few miles. That way . . . . about +90% of the fluid is new since some never drains during the first drain and fill.
After draining and filling the second time, loosen the side fluid level check bolt, lower the car on a flat. . level surface. . start the car and let it run a few minutes while moving the shift lever slowly to R . . . N . .. . D pausing in each location for 5 or 10 seconds. Do then move it slowly to N . . .. R. . .. and P. Pause again and repeat.
Leave the engine running and the car level. . . and remove the side level fluid check bolt and the fluid should just drip out a bit ..
It it does not, then it need to have a bit more added. . . slowly till it does. If the fluid runs out in a stream, then it you need to let it drain out the excess till it just drips a bit.

A manual transmission is simply a mechanical device whereas an auto transmission is a hydraulic device where the fluid is pressurized by an internal hydraulic pump to develop pressure necessary for gear shifting. In a manual transmission the oil serves only to lubricate the gears and bearings and does not get pressurized, therefore it can last much longer than an auto transmission fluid without any adverse effect. Because unlike inside your engine, there is no combustion blowby of corrosive gasses into the oil in a manual transmission, manual transmission oil can easily last 100K miles or more without any adverse effects.
