I think my wheels are 17x7.5 and they rub when I turn the wheel completely. It's really only an issue when parking in a tight spot. I've been meaning to add a spacer so it won't anymore but have no idea what to get.

Could any of you help me determine how these wheels might sit in my hatch LTZ?
Stock size: 17x6.5 with 41.5mm offset
New size: 18x7.5 with 42mms offset
I will need an adapter as well So that's 15mm-25mm added.
Would these tires stick out too much?

If you add a set of -15mm spacers to a set of wheels that have a +42mm offset and a wheel width of 7.5", you would be pretty close to a flush look. However, adding spacers bigger than -15mm might make your wheels over hang or poker out a little bit.
