So im on way to Cali on the I-40 and bang! I smack my side mirror into cone. Of course the cone has a steel rod in it and rips my mirror and mirror holder off. Does anyone have any idea how much it might cost to replace?

No, but are you sure that is your only damage. Once those cones start bouncing a lot of damage can occur especially under the car and including the rocker panel.
I knocked a passenger side outside rr mirror off a car and replaced it with an Autozone mirror which matched the driver side mirror perfectly BUT there was no remote control involved. There was additional scraping but at the time the car was over five years old and I had no interest spending a couple of thousand to get the repaint necessary.

Bummer. I would guess it shouldn't be more than $200-300 for the entire assembly. I think we paid under $200 for the entire OEM mirror assembly plus the prepainted cap for my wife's Mazda 3 a few years ago (that was dealer cost though). Can't imagine the Sonic's would be too much more.
looks like mirror caps can be purchased for around $50, both on this site and on ebay as well:

I looked in the Mitchell's estimating guide today, in the index it doesn't have a page number for 2012 Chevrolet Sonic, instead it has an @ symbol, which is explained in the book as "Information only available online. Please call to add online services to your subscription." What a load of BS. The Sonic is the only one with that symbol. It's not enough that we pay for a subscription to your book, but you can't include a few more pages for a Sonic?
Anyway, I looked up the still very similar 2011 Aveo, as I assumed the price would be about the same. The entire mirror assembly looks like it will cost around $200 (painted), give or take $20.

That's cheap compared to the extendable mirrors in my current ride. Those bastards were $700 last I checked.

Speaking of side mirror caps, how do you remove/install them just in case you wanna change the colors or whatever? Mine's inferno orange but I might wanna go just black (like my car) someday!

It's usually difficult to do after it's clipped in place. It's more likely to break, or the tool you use to pry it off scratch it than it is to come off.

I looked it up online and I think the part I need is only $18. The only damage was the mirror flew off. I still have the cap and the rest of the assembly.

I bought my passenger side mirror for my RS and it was $123 withy discount(the shop I work at has a commercial account with them) the cap was just over $40 and about $80 to get it painted black metallic to match my car
