It must be something I'm not doing correctly. The color of the car really highlights the error. My Red car looks red, and my white car looks white with the same camera.

it's purely a matter of your phone's camera software being awful and not understanding the color temperature of the area. The photo of your orange car is extremely balanced toward warm with a magenta cast, whilst the photos of the red and white cars are overly cool, and again, heavily leaning into magenta.
Seems you're not getting many good in-betweens. Triple check the settings on your app, sometimes people bump manual settings in while doing something like fumbling for the flash. Otherwise I think you're just out of luck with the phone. Keep an eye out for exposure settings and put them to 0, not plus or minus anything. That SHOULD also save your saturation issue, but if there's a separate control for saturation/vibrance make sure to reset that too
